It’s the time of year that certain vegetables are so plentiful that everyone who has a garden is pressing their bounty onto friends.
We had a nice visit with Missy, Evan and Marge a their Poe Valley camp and before we left Missy made sure we took a couple of huge yellow squashes with us. “I call this one home-wrecker,” she joked about the longest and most suggestive of the squashes.
Today we put “home-wrecker” to good use in a pot of soup packed with other veggies of the season. A big onion, a couple of potatoes and carrots, half a green pepper and a few stalks of celery all sautéed up nicely before I added a couple of cups of vegetable stock, a few dashes of liquid smoke and 3/4 cup of lentils.
The soup simmered for 1/2 hour and was ready just in time for Jim to come home for lunch and to refuel Amy & Arron after their workout. I buzzed the immersion blender in it just a couple of times to give the broth a little added thickening.
Arron noted that the air has just a hint of Autumn in it and I think enjoying the harvest of late Summer makes us appreciate the next turning of the wheel of the year.
