Back to Jim’s regular work schedule now that the university is getting back and ready for Spring semester. I made sure to have him a nice plate of warm (albeit left over) Vegan Hoppin’ John, Flax & Cornbread with Chestnuts and potatoes.
What about that left over half bunch of collards, you might ask? I wanted to see if they might make snack chips like the Kale & Hearty Chips! The store was out of kale and since collards were the same price per pound, I rationalized that it couldn’t hurt to try.
