Rhubarb Cake

For those folks who get Rhubarb just one too many time in their CSA…

Rhubarb Cake

1 1/2 C brown sugar
1/2 C shortening
1 egg
2 C flour
1 tsp baking soda
1/2 tsp salt
1 C sour cream
2 C rhubarb cut into 1/2″ pieces

Topping
1/2 C sugar
1 Tbs butter
1/2 C chopped nuts
1 tsp cinnamon

Mix topping ingredients until crumbly and set aside. Cream brown sugar, shortening and egg. Stir flour, soda and salt together and add to creamed mixture alternately with sour cream. Stir in rhubarb and pour batter into 13x9x2″ pan that has been greased and floured. Sprinkle with topping and bake @ 350° for 45 – 50 minutes.
