Eating Sauerkraut for the new year is a good luck tradition my family has always observed. It is typically paired with “pork” in Pennsyltucky but I used some Tofurky slices, rye bread and a Vegenaise based thousand island dressing to make a classic Vegan Reuben. Grilled up with some Daiya Cheese and my Jim & Rita’s Homemade Sauerkraut, this sandwich tasted like good luck to me!
