I know it’s Wordless Wednesday but I have some catching up to do and want to share these pretty little treats in case you want to make your own instead of spending more than you have to or settling for inferior non-vegan ingredients.
You can EASILY make your own candy eggs. I based my recipe on the same one I used for another Wordless Wednesday’s Walk on the Dark Side Peanut Butter Cups. I took a peek at the Christina Cooks recipe and modified it to make it my own. I don’t need a dozen candy eggs. Unless you are making them to give away, for a bake sale or to sell, 6 should be plenty.
Chocolate Peanut Butter Eggs
1/3 C smooth peanut butter
2 Tablespoons wheat germ
1 teaspoon maple syrup
pinch o’ sea salt
3 oz Extreme Dark Endangered Species Chocolate broken into smaller pieces
1 teaspoon grapeseed oil
1 Tablespoon sugar (optional)
Mix the peanut butter, wheat germ, maple syrup and salt together. Roll into 6 balls (should be about 1 1/2″ in diameter) and place them on a baking sheet covered with wax paper. Place the baking sheet into the freezer for an hour. Remove and gently taper the one end of each peanut butter ball to make each egg-shaped. Return to the freezer for another 1/2 hour.
While the egg shaped peanut butter is back in the freezer, set up a double boiler (or a bowl set into a pan of a bit it boiling water) to melt the chocolate, oil and optional sugar. Whisk together until melted completely and keep the water just at a simmer.
Remove chilled eggs from freezer and individually dip them into the melted chocolate using a fork, skewer or toothpick. Place each back onto waxed papered baking sheet and return them to the freezer for another 1/2 hour. Remove from waxed paper and wrap individually. Keep cool until serving.
