A super fast recipe that is creamy and bright. It goes well with Mexican food and would top a bowl of vegan chili nicely or round out and entrée like Pennsyltucky Tacos.
Avocado Mint Cream
2 ripe avocados
1/4 Cup spearmint leaves
juice from 1/2 a lime
pinch of salt
water if needed (no more that 1/4 cup)
Put the flesh of the 2 avocados, mint, lime juice and salt into a food processor/blender and blend until smooth and creamy. Depending on the size of the lime you may need to add water but no more than 1/4 cup should be necessary.
