Blackberry Salsa

Summer calls for bright and cool flavors and this salsa fits the bill. It is fast to come together and after it chills a bit is a perfect compliment to Pennsyltucky Tacos or nachos.

Blackberry Salsa

12 oz fresh blackberries
Zest from 1 lime
juice of 1/2 the lime
1 cucumber, chopped
1 fresh jalapeno, halved, seeded and thinly sliced
1 Tablespoon cilantro

In a bowl, add the berries, zest and juice. Gently mash the berries to allow them to release a little juice but allow many to stay mostly whole. Stir in the slices jalapeno and cilantro. Chill for at least 20 minutes before serving.
